Method
- Heat a skillet over medium heat with oil. Add in ground beef, salt, and pepper. Cook until all the pink is gone, breaking it into small pieces as you go.
- Add in garlic and ginger and mix cooking until fragrant, about 1 minute.
- Add in beef broth and bring to a simmer. Add the ramen noodles and cook until tender, about 2 minutes.
- Add in coleslaw mix, soy sauce, peanut butter and hoisin sauce. Stire to combine and allow vegetables to soften.
- Garnish with scallions and serve.
Notes
Easy swaps: Swap in whatever vegetables you have on hand, carrots, snap peas, or mushrooms all work. Add sriracha for a little kick. It all cooks in one skillet for minimal cleanup, making it perfect for a small kitchen.
