Ground Beef Ramen Stir Fry

A fast, one-skillet dinner made for busy college nights. This beef ramen stir fry uses just a handful of simple ingredients. It’s ready in under 20 minutes, easy to customize with whatever protein or vegetables you have, and cooks in a single pan for minimal cleanup.

Ingredients
  

For the stir fry
  • 1 tbs vegetable oil such as canola
  • ½ bag of coleslaw mix without the sauce
  • 1 lb ground beef
  • 1 ½ cups beef broth
  • 6 oz ramen noodles 2 packets, seasoning packets discarded
  • Salt and pepper to taste
  • ¼ cup soy sauce
  • ½ tbs peanut butter
  • ½ tbs garlic minced
  • 1 tbs ginger minced
  • 1 tbs hoisin sauce

Equipment

  • Large skillet
  • medium saucepan
  • medium bowl
  • whisk

Method
 

  1. Heat a skillet over medium heat with oil. Add in ground beef, salt, and pepper. Cook until all the pink is gone, breaking it into small pieces as you go.
  2. Add in garlic and ginger and mix cooking until fragrant, about 1 minute.
  3. Add in beef broth and bring to a simmer. Add the ramen noodles and cook until tender, about 2 minutes.
  4. Add in coleslaw mix, soy sauce, peanut butter and hoisin sauce. Stire to combine and allow vegetables to soften.
  5. Garnish with scallions and serve.

Notes

Easy swaps: Swap in whatever vegetables you have on hand, carrots, snap peas, or mushrooms all work. Add sriracha for a little kick. It all cooks in one skillet for minimal cleanup, making it perfect for a small kitchen.
