Spicy Cowboy Queso Dip

Ingredients
  

  • 1 lb. ground beef
  • 1 small onion diced
  • 1 jalapeño diced
  • 1 can diced tomatoes with green chilies 10oz can
  • 1 can black beans drained and rinsed 15oz can
  • 1 package cream cheese 8oz package
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef in a large skillet over medium heat. Cook until the ground beef is fully browned and no longer pink.
  2. Add the diced onion and jalapeno to the skillet with the browned ground beef and sauté for 3-4 minutes until the vegetables soften and become fragrant.
  3. Stir in the diced tomatoes with green chilies, drained black beans, cream cheese, shredded cheddar cheese, chili powder, salt and pepper. Mix well to combine all ingredients together.
  4. Continue cooking the mixture over medium heat, stirring occasionally to prevent burning, until cream cheese and cheddar cheese are fully melted and the dip is heated through. Approximately 5-7 minutes.
  5. Transfer the hot queso dip to a serving dish and serve immediately with tortilla chips for dipping.

Notes

As an alternative option, serve dip in a small crock pot set on warm for more snacking time.
