- Preheat oven to 425°F.
- In a medium skillet, cook the ground beef until browned and drain the excess grease. Add taco seasoning according to package directions.
- Add the refried beans to the skillet and stir to combine well. Remove from heat.
- Place the corn tortillas on a large baking sheet and lightly brush both sides with oil; don’t go too heavy or the tortillas may get soggy.
- Bake the tortillas for 2-3 minutes, until flexible.
- Portion the beef mixture onto one half of each tortilla and sprinkle with cheese. Fold the other half over and return to the oven for 8-10 minutes. Flip the tacos and bake an additional 10 minutes or until golden brown and crispy.
- Remove from the oven and serve with your favorite taco toppings.
Notes
Make it your own: swap the cheddar for Monterey Jack or pepper jack, and set out sour cream, salsa, and guacamole so everyone can build their own. To stay ahead of a hectic week, brown the beef-and-bean filling in advance and refrigerate, then assemble and bake when you’re ready. Store leftover filling and shells separately in the fridge for 2–3 days, then reheat the filling and re-crisp the tortillas in the oven for the best crunch.
