CHILLY DAY BEEF CHILI

This easy-to-make, even easier-to-eat chili recipe is perfect for a chilly day in. Set it and forget it until you're ready to dig in!

Ingredients
  

  • 2-1/2 lb chuck roast cut into 1/2-inch pieces
  • 2 cans black beans rinsed and drained, 15-1/2 oz
  • 1 can diced tomatoes chili or zest-style, 15-1/2 oz
  • 1 medium onion chopped
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp pepper
  • 1 cup thick and chunky salsa
Optional toppings:
  • shredded cheddar cheese
  • diced red onion
  • diced green onion
  • diced avocado
  • dairy sour cream

Method
 

  1. Add all ingredients except salsa and optional toppings to a 4- to 5-quart slow cooker. Mix well.
  2. Cover and cook on high for 5 to 6 hours or low for 8 to 9 hours, until beef is tender.
  3. Add in salsa just before serving and cook an additional 2 to 3 minutes. Add toppings as desired.
