Cheesy BBQ Beef Quesadillas

Meet the remix. Our Instant Pot BBQ Beef becomes tonight’s dinner: pile that leftover shredded beef into tortillas with melty white cheese, red onion, cilantro, and a drizzle of BBQ sauce, then crisp them up in a skillet or on the flat top. Because the beef is already cooked, these cheesy quesadillas come together in about 20 minutes.

Ingredients
  

  • 6 8-inch flour tortillas (or corn)
  • cups Monterey cheese shredded (or Mexican blend)
  • 2 cups shredded BBQ beef from the Instant Pot BBQ Beef
  • cup BBQ sauce
  • ¼ cup red onion diced (optional)
  • Cilantro chopped (optional)

Equipment

  • Large skillet or flat top
  • spatula

Method
 

  1. Lay a tortilla flat onto a warmed, lightly oiled skillet or flat top. Add 2-3 tablespoons of cheese to one half, then layer on the shredded BBQ beef, a drizzle of BBQ sauce, and optional toppings. Add 2 more tablespoons of cheese to the top and allow to melt 1-2 minutes.
  2. After cheese has melted, fold the tortilla in half. Tortilla should be golden brown and crispy. If not, allow to continue to cook, flipping as needed until golden and crispy.
  3. Slice and serve.

Notes

This is the remix of the Instant Pot BBQ Beef. It turns that leftover shredded beef into cheesy, crispy quesadillas in about 20 minutes. No Sunday leftovers on hand? Make a fresh batch of BBQ beef (or brisket) from scratch. Serve with Mexican rice, black bean salad, or Mexican street corn.
