Steak Pesto Pasta with Tomatoes

This Steak Pesto Pasta with Tomatoes combines tender slices of New York strip with creamy pesto and juicy cherry tomatoes for a meal that feels both romantic and comforting. Ingredients
  

  • 1 lb New York Strip Steak
  • 1 tbs olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 12 oz penne pasta
  • ½ cup Parmesan cheese grated
  • 1 pint cherry tomatoes halved
  • 1 tsp lemon juice optional
  • Fresh basil for garnish optional

Method
 

  1. Prepare pasta according to the box directions. Reserve ¼ cup pasta water.
  2. Season New York Strip Steak with salt, pepper, and garlic powder.
  3. Preheat oven to 500°F. In an oven safe skillet over medium-high heat sear steak for 2 minutes on each side. Transfer skillet and seared steak to preheated oven and roast for 3 – 4 minutes until 130°F for medium rare or 4 – 5 minutes until 140°F for medium.
  4. Once steak is cooked to desired doneness remove from skillet and allow to rest for 5 minutes and slice into ¼ inch thick pieces.
  5. After removing the steak in the same skillet over low heat add olive oil and halved cherry tomatoes. Sauté until soft.
  6. Remove skillet from heat and add pesto, pasta sauce, and parmesan to tomatoes and stir until they have come together to form the sauce.
  7. Add pasta and steak to sauce, serve and top with fresh lemon juice and basil for garnish.
