
Ground Beef and Cheese Taquitos
Spend 30 minutes on Sunday building a freezer-friendly meal the whole family will love. This recipe turns ground beef into 16 hand-held taquitos. Cooked juicy brown beef, folded with cream cheese, rolled up, and stashed in the freezer for the busy weeks ahead. Bake a pan now and freeze the rest; on hectic school nights, they go straight from freezer to oven to table with zero fuss.

Method
- Brown the ground beef in a large pan until fully cooked. Drain off any excess fat.
- Add the cream cheese to the ground beef and stir until the cream cheese has melted. Let the filling cool completely before assembling (this is important if you plan to freeze).
- Arrange the tortillas on a flat surface. Top each with an equal amount of the beef mixture, leaving a little room at the edges. Top each with about 3 tablespoons of shredded cheese. Roll up tightly, tucking as you go.
- To freeze for later: place the rolled taquitos seam-side down in even layers (separated with parchment paper, if needed) in one or two gallon-size freezer bags or containers. Seal and freeze.
- To bake now: preheat oven to 400°F and spray or line two rimmed baking sheets. Arrange the taquitos seam-side down, spray the tops with cooking spray, and bake 15–20 minutes, until the cheese is melted and the tortillas are golden brown.
- To bake from frozen: cover the frozen taquitos with foil and bake at 400°F for 25 minutes, then remove the foil and bake 5–10 minutes more, until golden and heated through.
- Serve warm with your favorite toppings.
Notes
Freezer-prep tips: always let the filling cool completely before rolling to prevent ice crystals, roll the taquitos tightly, and bake seam-side down for a clean seal. A fine mist of cooking spray on top gives the crispiest, golden exterior. Serve with taco sauce, avocado ranch, or a simple salad.
