
Steak Pesto Pasta with Tomatoes

This Steak Pesto Pasta with Tomatoes combines tender slices of New York strip with creamy pesto and juicy cherry tomatoes for a meal that feels both romantic and comforting. Method
- Prepare pasta according to the box directions. Reserve ¼ cup pasta water.
- Season New York Strip Steak with salt, pepper, and garlic powder.
- Preheat oven to 500°F. In an oven safe skillet over medium-high heat sear steak for 2 minutes on each side. Transfer skillet and seared steak to preheated oven and roast for 3 – 4 minutes until 130°F for medium rare or 4 – 5 minutes until 140°F for medium.
- Once steak is cooked to desired doneness remove from skillet and allow to rest for 5 minutes and slice into ¼ inch thick pieces.
- After removing the steak in the same skillet over low heat add olive oil and halved cherry tomatoes. Sauté until soft.
- Remove skillet from heat and add pesto, pasta sauce, and parmesan to tomatoes and stir until they have come together to form the sauce.
- Add pasta and steak to sauce, serve and top with fresh lemon juice and basil for garnish.
