Braised Short Ribs Tips over Roasted Cauliflower with Mango Salsa

Ingredients:

RIBS
  • 1 pkg CNB Short Rib Tips
  • 2 tbsp olive oil
  • 1/2 cup white onion, chopped
  • 3 large carrots, chopped
  • 1 tsp balsamic vinegar
  • 2 cups beef broth
  • 2 tbsp minced garlic
  • 1 tbsp onion powder
  • 1/2 tsp ground pepper
  • 1 head Cauliflower, sliced and browned for plating

MANGO SALSA
  • 1 Mango, diced
  • 1 Red onion, chopped fine
  • 1 Jalapeno, chopped fine
  • ¼ c cilantro, chopped fine
  • 1 Lime, squeezed with pulp
  • Pinch of Salt

Instructions:

  1. Season your rib tips with salt and pepper
  2. Heat up your instant pot on saute setting add oil then sear ribs on all sides
  3. Next set your pot to manual and add all ingredients except cauliflower
  4. Place lid and set for 30 minutes, let vent when finished
  5. Now in a hot pan brown both sides of your sliced cauliflower season with salt and pepper
  6. Place on serving plate top with ribs and place mango salsa over the ribs
  7. Serve and Enjoy!
