
RIBS
- 1 pkg CNB Short Rib Tips
- 2 tbsp olive oil
- 1/2 cup white onion, chopped
- 3 large carrots, chopped
- 1 tsp balsamic vinegar
- 2 cups beef broth
- 2 tbsp minced garlic
- 1 tbsp onion powder
- 1/2 tsp ground pepper
- 1 head Cauliflower, sliced and browned for plating
MANGO SALSA
- 1 Mango, diced
- 1 Red onion, chopped fine
- 1 Jalapeno, chopped fine
- ¼ c cilantro, chopped fine
- 1 Lime, squeezed with pulp
- Pinch of Salt
Instructions:
- Season your rib tips with salt and pepper
- Heat up your instant pot on saute setting add oil then sear ribs on all sides
- Next set your pot to manual and add all ingredients except cauliflower
- Place lid and set for 30 minutes, let vent when finished
- Now in a hot pan brown both sides of your sliced cauliflower season with salt and pepper
- Place on serving plate top with ribs and place mango salsa over the ribs
- Serve and Enjoy!
